Asparagus With Ginger
Asparagus recipes are
usually about steaming or boiling. This method takes a little
more effort but the result is worth it and makes for an unusual
side dish. It will also give you a bit of excercise.
You need the following:
- 1 bunch fresh asparagus
- 3-4 slices of fresh ginger
- 1 tbs olive oil
- 1/4 cup chopped nuts such as cashews, almonds or
similar
- salt and pepper to taste
Prepare the asparagus by snapping off the woody ends and
peeling it carefully from just under the flower down. This gets
rid of any stringy bits. Slice the asparagus spears into
bite-sized pieces. I usually do this on the slant to make the
presentation that bit more interesting.
Now put the oil and ginger in a skillet and heat it through.
Let the ginger sizzle for about 30 seconds and then discard it.
Add the asparagus pieces and cook by holding the pan just above
the heat and shaking continuously for about 4 minutes, or until
the asparagus is crisp. You could also do this in a wok, which
might be easier.
To finish, add the chopped nuts and season with salt and
pepper.
