Leftover Turkey Bake
The great thing about leftover turkey is that it's already cooked, so producing a tasty dish is
usually only a matter of minutes. Adding something like sweet potato can also stretch a modest amount of meat to serve 6 people or
more.
Start by preheating the oven to 190C,375F, and cooking up enough sweet potato to produce one cup when cooked.
Then assemble:
2 cups of diced leftover turkey
1 cup of sweet potato
2 cups of turkey stuffing
1/2 cup of milk
1 egg
40g butter
Salt, black pepper and nutmeg
Use a shallow casserole for this dish and butter it lightly. Then combine the turkey leftovers with the stuffing
and spread this in an even layer.
Put the egg, milk salt and pepper in your blender goblet and blitz it for a second or two, then pour this mixture over the turkey.
Mash the sweet potato with half the butter and the nutmeg and spread this over the top of the casserole. Dot the top with the remaining
butter.
Bake uncovered for 25 minutes and served with steamed greens and glazed carrots.
