Cold Turkey Leftovers With Mayonnaise
You know the feeling, hostile family eyes that dare you to serve one more slice of cold turkey before the dog gets his share.
Well this is one dish they won't want to give away. It's simple, delicious and can be made to stretch to any number of people. It also deals with that dryness you often find in cold turkey cuts.
Assemble:
2.3kg (5lb) cold turkey 1 tbsp olive oil + 1 tsp sesame oil 1 small, finely chopped onion 1 tbsp curry paste 1 tbsp tomato puree 100ml red wine 1 bay leaf 1/2 lemon, juice only 4 tinned apricot halves 300ml (1/2 pint) Mayonnaise 100ml (4 fl oz) whipping cream Salt and pepper
- Cut the turkey into bite-sized pieces.
- Heat the oils in a small saucepan, add the onion and cook until soft.
- Add the curry paste, tomato puree, wine, bay leaf and lemon juice.
- Simmer, uncovered, for about 10 minutes.
- Strain and leave to cool completely.
- Puree the apricots in a blender or food processor.
- Beat the cold curry sauce into the mayonnaise with the apricot puree.
- Whip the cream lightly and fold into the mayonnaise.
- Season first, then stir in the turkey pieces, chill and serve
You can serve this on a bed of salad leaves and accompanied by hot french fries, potato wedges, cold pasta, a rice salad or just about anything else you can think of.
Don't worry about the leftovers, there won't be any!
