Tapenade
Tapenade is so simple to make and is a great dip for pre-dinner drinks, or as a lunch snack spread on toasted French bread.
Simply blitz pitted black olives, a garlic clove or two, fresh lime juice, fresh coriander, salt and black pepper in a blender or food processor. You can make this as smooth as you wish, but my preference is for a coarse paste which not only looks good, but also retains its color and texture.
