One of the arguments I've heard against cooking a whole fillet of beef in the microwave is that it fails to change color and looks the same as when it went in. The truth is somewhat different.
The reason meat seems not to change color in a microwave oven is that it is rarely in there long enough to do so. Changing color, even in a conventional oven, takes time.
My recipe gives beef a convenient disguise plus the time it needs while producing a tender and truly succulent result with very little effort. And of course you could always cheat by finishing the joint off in a barbecue, just to give it that authentic smokey flavor.
These ingredients are for 10 people at a buffet-style lunch:
2kg (about four and a half pounds) whole fillet of beef
1tbs macadamia oil (or other good quality oil)
zest and juice of a lemon
1tbs Dijon or wholegrain mustard
1tbs honey
1tsp dark soy sauce
Whisk together the marinade ingredients until they are thoroughly combined, dry the beef with paper towel and coat it with the mixture.
Put the beef on a microwave roasting rack and cook on high for 35 minutes, turning over halfway through.
Cover in foil and allow it to stand for 10-15 minutes at the end of the cooking time. Carve as required.
