Swiss Steak
I have no idea what is Swiss about this steak recipe, but it’s very easy to do and was once very popular. It probably could be again.
To serve four people you need:
1kg of rump, round or chuck steak in four pieces 4tbs flour 4tbs olive oil 1 red onion, finely chopped 400g can (approximately) of crushed tomatoes Salt and freshly ground black pepper
Season the steak with salt and pepper and coat in the flour. Heat the oil in a fire-proof casserole dish and sear the steaks on both sides.
Remove the steak and add the onions. Cook until soft, then replace the meat, add the tomatoes and cook covered over a low heat for about two hours, when the meat will be tender.
