Steak With Salsa
Use fillet steak for this
terrific barbecue recipe. Don’t be deceived by how simple it
is, your friends will love it. And of course you can cook it
indoors on a griddle pan if you wish.
To serve four you need:
4 fillet steaks
2 red onions
2 tomatoes
2tbs flat-leaf parsley
1tbs balsamic vinegar
3tbs olive oil (the best)
Freshly ground salt and pepper
Get your barbecue hot plate really hot, slice the onions
thickly and toss them on to it. Cook them until black on both
sides and transfer them to a chopping board, replacing them
with the halved tomatoes.
While the tomatoes get the same treatment, chop the onions
and transfer them to a bowl.
As the tomatoes blacken, turn the over, let them heat
through and then transfer them to your chopping board as well.
Roughly chop them, discarding any skin that falls away, and add
them to the onions.
Now is the time to put on the steaks. They are only going to
cook for 3 minutes on the first side, time enough for you to
add chopped parsley, vinegar and salt and pepper to the salsa.
Stir well.
Turn the steaks and cook for a further 60 seconds. Take them
off the heat and let them sit on warm plates for two minutes
before serving with the salsa spooned on top.
