Steak in Red Wine
Steak tends to be associated with summer barbecues, but add a rich wine sauce and you have a winter feast, especially when served with colcannon and Brussels sprouts.
As an added bonus, this is a recipe for the microwave and will cook in around 25 minutes.
Use rump steak for the best result, although in truth you could use any of the better cuts. Allow about 150g of lean steak per person, so for four you will need:
600g rump steak, cut into bite-sized chunks 2 chopped bacon rashers 1 chopped onion 1 crushed garlic clove 1tbs flour 1tbs tomato paste 250ml good red wine 1 beef stock cube 75g button mushrooms, halved 1tsp mixed dried herbs
Cook the bacon, garlic and onion in a microwave dish on high for 5 minutes, stirring after 2 minutes.
Mix in rest of the ingredients, cover with a lid or plastic wrap and cook on high for a further 15 minutes, stirring after every five minutes. Once the cooking time has ended allow the stew to stand, covered in the microwave, for a further five minutes.
