Sirloin With Juniper

This is a cheat. It's sirloin steak before it becomes - well - steak. In other words it's the whole joint marinated and then roasted on the barbie. You slice it up after you have cooked it.

For 8 people you need a boned out sirloin weighing in at 2kg, which is roughly 4.5 pounds US and UK speak. You also need that jar of dried juniper berries which has been lurking in the back of the pantry for ages, waiting for someone to make bath tub gin. Here's a more legitimate use for it.

Assemble:

  • 2kg whole sirloin
  • 2-3tbs chopped juniper berries
  • 1tbs cracked black pepper
  • 1tbs sea salt
  • 2tsps mustard powder

Mix all the spices together and roll the beef in them, pressing the juniper into the meat. Try and get a nice even covering, including the ends. Leave in the refrigerator overnight or for at least three hours.

Take the meat out of the fridge an hour before you intend to cook it and fire up the barbie.  Put the joint on a rack of some kind and roast over indirect heat with the lid closed for an hour and twenty minutes. Allow to stand, covered, for ten minutes before carving into 8 even steaks.
