Rump Steak Satay

You can either make your own satay sauce for this steak recipe, which is basically peanut butter, or simply buy a bottle from your local supermarket. I recommend the latter for a quick and easy family meal.

For four people you need:

850g rump steak, cubed
125ml satay sauce
8 wooden skewers
2 small cucumbers, thinly sliced lengthwise
2 scallions, thinly sliced
2 tbs sweet chilli sauce
leaves of 2 baby cos lettuce

Marinade the beef in the half the satay sauce for at least 30 minutes. Lightly oil the skewers and thread the beef on to them. Using fierce heat, barbecue or grill the skewers until the meat is browned and lightly charred. Warm the remaining satay sauce.

Mix the cucumber, scallions and chilli sauce and arrange on the lettuce leaves. Top with the satay skewers.
