Meat Loaf With Barbecue Sauce

Meat loaf is one of those great family stand-bys that can be eaten hot or cold and even finds its way into sandwiches with mustard and ketchup. This Aussie recipe calls for it to be cooked in a barbecue sauce to add extra piquancy and flavor.

To serve 6-8 people generously you need:

  • 500g minced round steak
  • 500g sausage meat
  • 1 cup of breadcrumbs
  • 1 chopped onion
  • 1 tbs chopped flat-leaf parsley or coriander (cilantro)
  • 1 teaspoon of curry paste
  • 1 egg beaten into 1 cup of milk
  • 1/2 cup of water
  • salt and pepper

For the sauce you need:

  • 1 cup tomato ketchup
  • 1 cup of water
  • 30g butter
  • 1 cup Worcestershire sauce
  • 1 cup brown sugar
  • 1 tsp instant coffee granules
  • 2 tbs vinegar
  • 2 tbs lemon juice

Make the sauce by combining all the ingredients in a saucepan and bringing it to the boil, stirring frequently. Be careful not to let it 'catch'.

Preheat the oven to 220C, 425F. Grease and lightly flour a non-stick loaf tin.

To make the meat loaf, thoroughly mix the first six ingredients in a bowl. Gradually add the liquid to form a smooth(ish) mixture and season with salt and pepper. Put this in the loaf tin and bake for 30 minutes.

At the end of this time, carefully pour off the excess fat and replace it with the barbecue sauce. Return this to the oven for a further 45 minutes. Baste the loaf with the sauce it's cooking in about half way through the cooking time and again five minutes before removing from the oven.
