Cream of Spinach Soup
Spinach is one of those
dark green vegetables stuffed with vitamin E that are a great
ally in the battle against high cholesterol levels. Here it's
used to make a nourishing soup from which very little of the
goodness is lost.
For 4 people:
300g (or thereabouts) of frozen spinach, thawed
2 cups chicken stock
2tbs flour
1 chopped onion
1 rasher of bacon, finely chopped
1tbs or less of olive oil
1 cup milk
Salt and pepper
Fresh nutmeg
Put the first four ingredients in a blender and blend until
smooth.
In a heavy based saucepan, fry the bacon in a little olive
oil. Add the blended mixture while stirring and bring to
the boil. Cook for a further 5 minutes, stirring from time
to time. Just before serving adjust the seasoning and grate
a little nutmeg into each plate before adding the soup.
