Smoked Salmon Dip
Nothing beats a really fresh, home-made dip to go with those pre-dinner drinks. This quick and easy salmon recipe can be made the day before and takes no time to do.
Put together:
250g cream cheese such as Philly 1 cup sour cream 1/4 cup of mayonnaise 200g smoked salmon, finely chopped grated rind of a half a lemon 2tsps lemon juice 2tsps Dijon mustard 4 scallions, finely chopped salt and pepper to taste
Beat the first three ingredients together until they form a smooth paste, then stir in everything else and mix thoroughly. Adjust the seasoning with salt and black pepper and a little extra lemon juice if necessary.
