Salmon with Teryaki


You can buy teryaki marinade in bottles, but for this salmon recipe I strongly recommend you make your own version using the ingredients listed below.

The idea is to marinate the salmon steaks overnight in the teryaki mixture, and then use the marinade as a sauce for the noodles or rice. Here's what you need:

  • 4 salmon steaks
  • 125ml soy sauce
  • 60ml oyster sauce
  • 60ml mirin
  • 2tbs soft brown sugar or palm sugar

Put the salmon steaks into a food-safe plastic bag, combine the remaining ingredients in a bowl and pour over the salmon. put the plastic bag with the fillets into a dish large enough to let them lie flat and keep in the fridge overnight. The idea of the plastic bag is that it helps to keep the salmon evenly in contact with the marinade.

The next day, take the salmon out of the bag and pour the marinade into a small saucepan. Cook the steaks on a hot barbie until just cooked through. Boil up the marinade on the same barbie and either add it to the noodles or rice you intend to serve with the fish, or simply pour it over the steaks themselves.
