Salmon with Pesto
The versatility of salmon is demonstrated by this dish, which is cooked in the microwave. It makes
the king of fish accessible to everyone, even the non-cooks out there. This recipe is quick, easy and gives an excellent
result.
You need:
4 salmon fillets, cutlets or steaks
4 largish tomatoes
2 tbsp balsamic vinegar
2 tbsp white wine
salt and pepper
Now, you can either use store-bought pesto or make your own, which will give a tastier result. You make it by putting a bunch of basil, a
handful of pine nuts, a peeled clove of garlic and four tablespoons of grated parmesan cheese into a food processor, and blending these on high
with 60 ml of oil.
Back to the salmon:
Slice the tomatoes and use them to cover the base of a microwave dish. Sprinkle them with a little salt and the balsamic.
Arrange the salmon pieces on top of the tomatoes, sprinkle them with the wine, cover and microwave on high for 2 minutes.
Remove the cover and give each piece of salmon a couple of twists with a pepper mill. Cover again and cook for a further 4 minutes on
medium.
Serve the salmon on the bed of tomatoes and topped with a good dollop of pesto. Any leftover pesto can be stored in the fridge using an
air-tight container, or by covering with a film of olive oil.
