Dill is something of an acquired taste, but it goes well with fish of all kinds and in particular
this microwaved salmon dish. Quick to cook, this makes a great supper dish for two busy people.
Cooking your salmon steaks in a covered container will ensure no mess in the microwave and give you an excellent result, but
please be careful when opening it. Steam can burn you.
You need:
2 salmon steaks
2 large fronds of dill
2 tbs dry white wine
1 thinly sliced lemon
salt and freshly ground black pepper
1 microwave dish with cover*

* The dish I use for this recipe is an oblong steamer that has a rack to put things on and a little slider on top to let the
steam out, but you could just use a plate and cling wrap for a cover. Make a hole in the cling wrap if you do.
Okay, here's what to do; Put the salmon on your cooking dish so that that the thickest parts point towards the outside
and the thinnest overlap in the middle of the dish. This will help to create an even thickness.
Sprinkle the fish with salt and freshly ground black pepper, cover each steak with a dill frond and top that with a layer of
lemon slices, so that the fish is completely covered. Pour the wine over both steaks and cover.
Microwave on high for exactly 4 minutes and then leave to stand, in the covered container, for a further 4 minutes. Remove the
lemon slices and serve on individual plates, spooning any juices over the fish.
