Salmon Pâté
A tin of red salmon can quickly be turned into a delicious pâté with the aid of your microwave and a food processor. It
makes a great summer first course or light lunch.
For four people you will need:
440g tin of red salmon, undrained 30g butter
3 chopped scallions
1tbs all-purpose flour
1tsp of mustard powder
½ a cup of sour cream
¼ cup of mayonnaise
60ml white wine
2tbs of lemon juice
1tbs gelatin crystals
60ml of water
Put the butter and scallions in a glass bowl or similar and microwave on high for 3 minutes, stirring halfway through.
Add the flour and mustard and cook for a further 1 minute.
Stir in the mayonnaise, sour cream, wine and lemon juice. Put this mixture into a blender or food processor and blend with the salmon until
you have a smooth paste.
Put the water in a glass and sprinkle the gelatin on top. Microwave for about 20 seconds on high or until the gelatin has dissolved.
Allow this to cool a little and then stir it into the salmon paste, mixing thoroughly.
Lightly oil a mould, pour the mixture into it and refrigerate until set.
