Salmon on a Plank
Why would you want to cook salmon on a plank? Because it cooks perfectly every time and the Australian hardwoods used impart a terrific flavor to the finished dish.
It's also a novelty that will amuse your guests and be something of a talking point. And you don't have to stop at salmon. Steak, chops and chicken can all be cooked in a barbecue oven in the same way. All you need is the smokeboards, which are readily available by mail from Aussie chef Vic Cherikoff's online store.
The recipe below is one that I have adapted from Vic's website.
For one serve, you need:
Preheat your barbecue to maximum.
Pour a little of the macadamia oil into the palm of one hand, rub your hands together and then wipe them all over the fish. This will give you exactly the right amount of oil coating. Season the salmon lightly with salt and pepper and place in the middle of the smoke board.
With the barbie good and hot, place the smokeboard on the grill and close the lid. Leave to cook for 10 minutes while you prepare the salad. This will produce a medium rare result. Remove the fish, plank and all, from the oven and sprinkle with lemon juice.
If you like your fish well cooked, take it out of the oven anyway but leave it on the board to rest for a further five minutes. It will continue to cook and in fact this is a neat way to serve it. But beware, that board is hot!
