Salmon in Breadcrumbs
This simple salmon dish is tastier than it sounds and is based on a traditional Spanish recipe for hake, a North Atlantic fish popular in much of Europe.
You need:
800g of salmon fillet, cut into eight pieces 4 slices of thick stale bread such as pana de casa, crusts removed 4 garlic cloves, peeled and halved A good handful of flat-leaved parsley Olive oil to moisten Juice of a lemon Salt and freshly ground black pepper
Preheat the oven to 220ºC, 425ºF
Put the salmon pieces in a shallow dish, squeeze the lemon juice over them, sprinkle them with salt and black pepper.
Put the bread, garlic and parsley into a food processor and process to a fine breadcrumb texture. Moisten this mixture with olive oil so that you can spread it over the fish.
Bake in the oven for 20 minutes.
