Salmon Hotpot

A can of salmon, some vegetables, a little cheese and a microwave oven. Cheap, nourishing and an easy family recipe. You can even use leftover rice.

This whole meal will take about 20 minutes. You need:

1 220g can of red salmon, undrained 2 cups of cooked rice
1 chopped onion
1 chopped carrot
1 chopped stick of celery 1 beaten egg
4 sliced mushrooms
1 chopped red pepper
1tbs tomato paste
20g clarified butter
125g grated cheese, such as Cheddar

Melt the butter in a suitable microwave dish, stir in all the vegetables, season with black pepper and cook on High for 5 minutes.

Add the rest of the ingredients except the cheese, which you sprinkle on the top, salt to taste, and mix well.

Sprinkle on the cheese and microwave on High, uncovered, for a further 8 minutes.
