Smoked Salmon Roulade
Smoked salmon is an extremely versatile party dish. This recipe makes about 20 delicious little appetizers to be served with pre-dinner drinks.
You need:
125g smoked salmon 125g soft cream cheese 1tsp lemon juice 2tsps grated horseradish Salt and freshly ground black pepper A sheet of greaseproof paper measuring 15x15cms
Lay the slices of smoked salmon, slightly overlapping, on the greaseproof paper so that they form a rectangle.
Mash the rest of the ingredients together and spread the mixture evenly over the smoked salmon.
Now, using the paper to lift one side, carefully roll the smoked salmon up into a thin sausage. This is a little tricky at first, but if you keep the paper taut you will soon get the hang of it. Transfer the roll to the refrigerator. It needs to stay in there, covered, overnight.
To serve, cut the roll into 5mm slices and have some lemon wedges to hand.
