Salmon With Garlic Butter
Makes 4 servings
Garlic Butter:
1/2 cup real butter, softened 1 tablespoon green onions or shallots, minced 2 cloves garlic minced 2 tablespoons parsley minced fresh Salt and freshly ground pepper to taste
Salmon Steaks: 4 salmon steaks 1-inch thick Salt and freshly ground pepper to taste
Heat broiler. Blend all ingredients for garlic butter until smooth either with fork or in a food processor. Pat salmon steaks dry between paper towels. Place steaks on greased rack of broiler and spread 1/2 of garlic butter on top. Place under hot broiler 4 to 6 inches from heat for 7 minutes. Carefully lift steaks with spatula and turn over; spread uncooked side with remaining butter. Season with salt and pepper; broil as above. Place on heated serving platter and garnish with lemon halves. Serve immediately.
