Blackened Salmon Steaks
Spice up your next fish supper with this Cajun-style way of preparing and cooking salmon. I've suggested steaks
but you could use cutlets. The important things are a really hot barbecue and some very cold beer.
For four people, start off by marinating 4 salmon steaks overnight in two tablespoons of olive oil combined with a coarsely grated
piece of ginger, about the size of your thumb. Then drain the salmon, discard the marinade and mix together the following ingredients:
- 1tbs turmeric
- 1tbs mustard powder
- 1tbs smoked paprika
- 1tbs garlic powder
- 1tbs ground fennel
- 1/2 tsp cayenne pepper
- 2 tsps salt
Coat the fish on both sides with this mixture and cook on an open barbie for about 4 minutes each side, turning once, or until just cooked
through. Serve with some chilled minted yoghurt or a side dish of tzatziki.
