- Gravadlax
This dish (sometimes called Gravlax) has its roots in Scandinavia. It's an admirable way of preserving salmon while producing a light, delicate flesh that is an excellent substitute for the smoked variety
- Salmon and Citrus
Fish like salmon will ‘cook’ in citrus juice, but it’s hard to convince some people that the fish is not still raw. This recipe combines a marinade with some cooking to overcome this objection
- Salmon and Crab Pate
Delicious as an appetizer, this is my fast-track version of a popular salmon and crab starter. Serve it with crisp dry toast or in little spoonfuls on small crackers and topped with a slice of dill pickle.
- Salmon in Ginger
This is another salmon dish in which the ‘cooking’ is done by marinating. Unlike gravadlax, this marinade is not dry and the salmon is sliced before pickling in the lime juice and spices

- Salmon Parsley Rounds
This is a very neat way to make smoked salmon go that little bit further. You could also use prawns (shrimp) or crab instead. In fact, just about any cooked seafood will do the trick.
