Sweet Potato Blinis
Blinis are a kind of small pancake made from potato. This is a novel variation on a classic dish which will add color and flavor to any meal, but which is especially good with chicken.
Assemble:
250 grms sweet potato 2 eggs 1 tbsp all-purpose flour (plain) 1 red onion, finely chopped Baking powder 1 tsp salt Oil for cooking.
Peel and grate the sweet potato, lightly beat the eggs. Mix all the ingredients except the oil in a suitable bowl and add a pinch of baking powder.
Heat the oil in a large skillet over moderate heat and drop tablespoonfuls of the mix into it. Flatten each pancake slightly and cook for five minutes before turning and cooking for a further five minutes.
Drain each blini on paper towel and keep warm until you’ve cooked the lot. This mix will produce about 2 pancakes per person, so try to cook four at a time, which will prevent the oil from cooling off too much as each portion is added.
