Smashed Potatoes
This is a novel way of presenting baked potatoes and one that I use for the barbecue in particular. It's a bit
of fun and you will find the kids more than willing to help out with the last bit.
Mediums sized potatoes are best for baking, whether on the barbie, in the oven or using a microwave. For 8 people you will need:
- 8 potatoes
- 2 cloves garlic, crushed and then chopped
- 100g (about 2oz) butter
Wrap the potatoes individually in foil and cook them in a covered barbecue for 45 minutes or until cooked through. If your barbecue allows it,
use indirect heat.
Lightly poach the garlic in the butter. Put the cooked and still wrapped potatoes on a flat surface and get the kids to belt them with a
meat mallet or similar so that they flatten out a little - say to about half the original thickness.
Just before serving, remove the foil and brush the potatoes with the garlic/butter mixture. Sprinkle with a little salt and pepper.
