Sliced Potato Bake
This easy potato bake is also the basic recipe for classic dishes such as Potato Lyonnaise. Master this, and you’ve mastered them all.
To serve four people assemble:
500 grms potato, peeled and thinly sliced. 50 grms butter 1 tsp mixed dried herbs 50 mls milk Salt & pepper
Preheat the oven to 230C
Put the potato slices into a largish saucepan and cover with cold water plus the milk. The liquid should just cover the potato. Add 1 tsp of salt.
Bring this to the boil and simmer for one minute. Drain and rinse with cold water, then layer the slices in a greased baking dish, scattering the herbs as you go and adding a few twists of the pepper mill.
Dot with the butter and bake uncovered for 20 minutes.
If you wanted to, you could finish this dish by scattering some grated cheese, such as pecorino or parmesan, on top and returning it to the oven for a further 5 minutes, or until the cheese browns.
