Great for an informal lunch or supper, this potato and bacon salad is all the more attractive
for being cooked in the microwave. It's so quick you can cook it at the last minute.
You can serve this warm, which is my preference, or chill it in the refrigerator for a summer treat. It's great with chicken, or
any other cold meats, and is simply packed with flavor.
Here's what you need for 6 people:
6 potatoes peeled and sliced
1/2 a cup of vegetable stock
25mls olive oil
3 tbs white balsam vinegar
1 stalk celery, finely chopped
60g smoked bacon, chopped
black pepper
fresh basil leaves, chopped
Put the sliced potatoes in a covered microwave dish, salt them lightly and cook on high for 10 minutes or until cooked
through. Let them cool enough for you to handle them and then layer them in a serving dish.
Put the rest of the ingredients except the basil in a microwaveable jug (glass is ideal) and cook on high for five minutes. Let
stand for a further 2 minutes then stir in the basil and pour this mix over the potatoes. Serve at once or chill for later.
