Baby Potatoes
Baby potatoes are called
'chats' in Australia and take a surprisingly long time to cook,
even in a microwave. The great thing is to preserve all their
goodness by not cooking them in water.
The easiest way to do that is to cook them in a
microwave with butter or, if you are not into using animal
fats, olive oil.
Here's my basic recipe:
Wash the potatoes thoroughly and dry them
off with paper towel. Put them in a microwave dish with the
butter and parsley. Cover and cook on high for 12 minutes,
giving them a shake to coat them with the butter/parsley mix
halfway through. At the end of the cooking time let them stand,
in the microwave, for a further 5 minutes.
