Avoiding Burnt Pans
I will never forget the day my reduction sauce reduced - to a cloud of smoke and a burnt out pan. Fortunately my then head chef took pity on me and gave me an invaluable tip, which I'll now pass on to you.
Whenever you have something which needs to cook in boiling water over a long period of time, add a clean glass marble to the saucepan. If the liquid level gets too low, the neighbours will hear it even if you don't and come running!
