Bitter Mayonnaise

If your home made mayonnaise tastes bitter you have probably used olive oil to make it. Don't.

My preference is for grape-seed oil, which has a light, clean taste, but just about any good quality oil will do the trick. Just ignore the recipe books - do NOT use olive oil. It seems to have a problem mixing with egg yolks. It will produce perfect looking mayonnaise but is almost uneatable due to the inherent bitterness.

Olive oil doesn't seem to behave in this fashion when mixed with lemon juice, and it blends successfully with vinegar, so it seems that the problem is the eggs. It gets even worse if you add garlic. Whatever the reason may be, if you have suffered from this in the past and abandoned making mayonnaise because of it, please try again. Only this time avoid using olive oil.
