Chocolate Cake
A lot of very easy desserts can be made, just by having a quick and easy chocolate cake mix to hand. This one behaves
like a sponge and even the kids can make it.
You don't need to be a cook to get good results with this recipe. You just need to follow along and be a little careful with your
measurements.
Ingredients
2tbs melted butter
2tbs cocoa powder
1 cup self-raising flour
1 cup sugar
1/2 cup milk
2 eggs
1/2tsp vanilla essence
1/2tsp coffee granules
Method
Preheat the oven to 180°C/325°F
Lightly grease a 20cm/8 inch cake tin.
Sift all the dry ingredients into a bowl, add everything else as is and beat for 3 minutes using an electric egg beater or similar.
Pour this mixture into the cake tin and bake in the centre of the oven for exactly 30 minutes. If it is springy to the touch at the end of
that time, it's ready.
I have never know this to take longer than half an hour, but if you want to be extra safe, poke a wooden skewer in the centre. If it comes out
clean, your cake is ready.
Turn out when cool enough to handle and leave on a cake rack to cool completely before handling it further.
If you want to ice it, dust it with a little flour or sifted cocoa powder before doing so to help the icing stick.
