Tandoori Chicken Breasts
Okay, it's not the real thing - you don't have a tandoor, which is the clay oven this dish is traditionally cooked in. But it will come close and you will enjoy the flavor, especially if you cook this on the barbie.
For four people you need 4 skinned chicken breasts. Cut into each breast at one inch intervals and then marinade in a mixture of 8 tbs Tandoori paste, 3-4 crushed garlic cloves and 8 tbs natural yoghurt.
Maintain the marinade in the fridge for several hours, preferably overnight.
Get your barbie really hot and cook the breasts for around 10 minutes each side. Longer if necessary. Or cook under a very hot grill for the same amount of time.
Serve the chicken with lime or lemon wedges, rice cooked with cardomum and a dressed salad. Just about any chutney or lime pickle is a great complement - and beer is the best 'wine'.
