Spicy Barbecue Chicken
Chicken always benefits from a good marinade, especially the strangely tasteless supermarket variety. You can
vary the spice mix given, but be sure to give the flavors time to develop.
Assemble:
4 chicken thigh fillets, skin on
3 cloves of garlic, crushed
2tsp cumin
1tbs ground coriander
1 small chilli pepper, chopped
2tsp parsley, chopped
Juice and zest of 1 lemon
3tsb olive oil
Make a paste of the olive oil, the spices, the garlic, chilli and parsley. Add a little salt and rub this over the chicken pieces, coating
them thoroughly. Leave to marinade for at least 30 minutes.
Get the barbecue good and hot, but turn the burners down before adding the chicken (or use a ridged skillet). Put the chicken on the grill,
skin-side down, and cook for 5 minutes, taking care not to let the spices burn too much.
Turn the chicken and cook for a further 7 minutes or until thoroughly cooked through.
