The idea behind chicken with vodka is to create a glaze that will give a great finish to the dish as well as add some welcome flavors. You can also get creative with the name. How about Chicken Aurora? *
There is nothing complicated about this recipe. It is a basic barbecued chook with a bit of style. You will need the following:
1 whole chicken
1/2 cup sugar
zest and juice of 2 lemons
1/4 cup of vodka
2tbs water
1/2 tsp cayenne pepper OR sweet paprika

Put all the ingredients except the chicken in a pan and bring to a rolling boil. Reduce over medium heat for about 5 minutes until you have a thickened glaze. Allow this to cool a little and divide into two.
Cook the chicken in a covered barbecue according to its weight and, 25 minutes before the end of cooking time, brush it liberally with the first portion of glaze. At the end of the cooking time brush it again with half the remainder and leave to stand in a warm place for 10 minutes.
Finish off the dish by brushing with the remaining glaze just before presenting the bird at the table, where you can show off your carving skills. If you are nervous about that, carve the bird in the kitchen and present it on a platter, brushed with the glaze, for easy serving.
