As a way to use up leftovers, adding a fresh vegetable and baking with cheese has a lot to recommend it. You could also use cooked turkey for this recipe.
Here’s what you need:
1 cauliflower 2 cups of cooked, diced chicken 1 onion, finely chopped 250ml milk 2tbs all-purpose flour 125g grated cheese (Cheddar or similar) 45g clarified butter Salt and pepper
Break the cauliflower into florets and cook these, covered, in boiling salted water until just tender – about 5 minutes. Drain and transfer to a casserole dish.
Preheat the oven to 180°C 325°F
Melt the butter in a pan and cook the onion until soft. Stir in the flour and allow this to cook for about a minute before taking the pan off the heat and adding the milk, whisking as you pour.
When you are happy everything is thoroughly blended return the pan to the heat and keep stirring as you bring the mixture to the boil. Reduce the heat and allow the sauce to simmer for about 5 minutes in order to thoroughly cook the flour. Stir occasionally.
Finally add the chicken and pour the mixture over the broccoli. Top with the cheese and bake in the oven for about 15 minutes, or until the cheese starts to brown.
