Caramelized Chicken
Chicken prepared in this way can be oven-baked or cooked on the barbecue. It’s not nearly as rich as you might think and is a treat even for those picky eaters.
For 4 people, combine 1tbsp of soy sauce, the juice of half a lemon and 2tbsp of dark brown sugar. You could also use molasses in place of the sugar.
Trim 4 skinned chicken thigh fillets of any fat and coat them with this marinade, then leave them in the refrigerator overnight if possible.
Cook them in a an oven preheated to 180ºC, 350ºF for about 30 minutes, until done. Alternatively cook them on the barbecue over moderate heat.
Serve them by slicing and arranging over saffron rice. A fresh green salad with a lemon vinaigrette dressing goes well with this.
