Buffalo Wings

You'd be right if you thought that buffalo don't have wings and this chicken recipe didn't come from Texas.

But it's becoming very popular in the Lone Star state, I'm told, even though it's really named for the town of Buffalo, New York. This is a simple version which makes use of your favorite bottled hot sauce. You can use any you like.

They do things big in Texas, so this is a chicken recipe for 10 which serves 6.

You need:

  • 1.5kg chicken wings
  • 6 tbs Lousiana-style hot sauce
  • 250g butter, softened
  • Blue cheese dressing for dipping

Preheat the oven to 180C, 325F

Trim the chicken wings by cutting off the tips and then halving them at the joint. Bake in the oven for 35 minutes, turning once.

Put the cooked wings in a bowl, combine the hot sauce and the butter and cover the wings with this mixture. Cover the bowl and refrigerate overnight. The next day, put the wings, with the sauce, in a roasting tin and bake at 220C, 425F for 10-15 minutes.

Serve with the blue cheese dressing for dipping.
