Barbecue Chicken Recipes

Barbecues were made for chicken - or perhaps it's the other way around. In either case what you get is beautifully cooked and very tasty results. There are two things to watch out for; undercooking, which will create a few problems for your diners, and overcooking, which will do nothing for your reputation.

The trick is to make sure the barbecue is good and hot before you start cooking and not to rely just on the cooking times. Never be afraid to slit the chicken open with a thin bladed knife and look to see if the inside meat is still pink or shiny.
