Cake Mix


I want to prove to you that baking a cake is simple. Just follow the recipe and you will have a perfect cake. After that you can experiment.

I’m assuming this is a first time attempt for you, so I have reduced the ingredients to the most basic and the simplest. Be sure to line your cake tin, which should be 20cm to 25 cm (around 8-10 inches) in size, with baking parchment. Or, use a spring-form tin of the same size that you have lightly greased with butter.

Now assemble:

200g* self-raising flour
150g melted butter
150g superfine (caster) sugar
2 eggs
2tbs of milk
Pinch of salt
150g fruit – this can be dried fruit, cherries, apple, banana, passion fruit or just about anything you want to flavor the cake with.

* 50g = 2 ounces

Preheat the oven to 190°C, 375°F

Using a food mixer, combine all the ingredients thoroughly, including the fruit. Transfer the mixture to your cake tin and bake for 50 minutes in the middle of the oven. Test by inserting a skewer down through the middle of the cake. If it comes out clean your cake is done.

Transfer it to a cake rack to cool and remove it from the tin once you can handle it comfortably
