Broccolini With Chili
Broccolini is a sprouting variety of broccoli and usually comes in bunches. Since you eat everything there is no waste and its appearance gives a great look to your meal.
It’s as versatile as broccoli and will mix happily with most spices. Be careful not to overcook it.
For this recipe, and to serve four people, put together:
1 large bunch of broccolini 1 onion, chopped 2 garlic cloves, sliced into spears 2 chili peppers, deseeded and chopped 2tbs of olive oil + 1tsp of sesame oil
Cut the stalks from the broccolini and split them in half.
Heat a wok or large skillet and add the oil. Swirl it round to coat the surface of the pan and add the onion, chili and garlic in that order. Stir fry briskly for 2 minutes over medium heat, then add the broccolini stalks.
Stir fry these for about 3 minutes before adding the florets and cooking for a further 4 minutes. Keep everything moving and serve immediately the broccolini is tender.
