You need:
1 red cabbage, trimmed, cored and finely shredded 100g clarified butter (ghee) 1 small onion, finely chopped 1 apple, peeled, cored and chopped 2tbs red wine vinegar 4tbs red wine Salt and pepper
Preheat the oven to 180°C, 350°F
Heat the butter in a fire-proof casserole dish and stir in the cabbage. Cook while stirring for about a minute and then add the apple and the onion. Stir thoroughly over a fairly high heat before adding the wine and vinegar.
Season with salt and pepper, cover and cook in the oven for 90 minutes. Stir thoroughly halfway through the cooking time.
