Brown Edges on Lettuce

I made some notes a while ago because I had it in my mind to write a cookbook for the internet. Among those I found in an old notebook was a snippet on handling salad leaves such as lettuce, and it's pretty sound advice.

Those brown edges that appear in the salad bowl are cause by cutting green leaves with a steel-bladed knife. There are plastic-bladed knives available, but by far the best way to prepare salad is to tear the leaves with your hands, and that includes any herbs that you may be using.

Salad leaves treated in this way will keep very well in a plastic bag in the cool section of the fridge.
