An Alternative to Breadcrumbs

If you like the schnitzel style of cooking, but find a breadcrumb coating too bland, try using a mix of almond meal and grated Parmesan or Pecorino cheese instead.

You can further season this mix using chopped herbs and/or black pepper, or any other spice that comes to mind. You will not get the same colour in the cooked food that you see in magazines or supermarket packaging though. That's because you won't be adding any artificial coloring for effect, will you?
