Macadamia Nut Pie

This is one of those last minute desserts which presupposes you have macadamia nuts on hand, as well as a frozen pie crust. Given that is the case, surprise guests by producing this in minutes from the microwave.

You could also cook this ahead and reheat it, again using the microwave, without any loss of quality. The kids will love it. You need:

  • 1 cup of roughly chopped macadamia nuts
  • 1 frozen sweetcrust pastry case (22cm, 10 ins))
  • 1tbs apricot jam (jelly)
  • 3 eggs
  • 1/2 cup of brown sugar
  • 1 cup maple or golden syrup (or corn syrup)
  • 2tbs butter
  • 1tbs flour
  • pinch of salt

Put the apricot jam in a glass bowl or similar and microwave for 15 seconds. Paint the inside of the pastry case with the melted jam and microwave it for 45 seconds.

In a glass bowl or microwave dish, blend all the ingredients except the nuts, combine them well and microwave on high for 1 minute. Stir in the chopped nuts.

Cook on high for a further 3 minutes, stirring halfway through, and then pour into the pastry case.

Reduce the microwave power to medium and cook the pie for a further 12 minutes, by which time the filling should have set. If it hasn't, give it a bit longer. Allow the pie to stand for about 5 minutes before serving with vanilla ice cream or creme Chantille.
