Angela's Aussie Chocolate Cake

Angela is the second daughter of my wife's niece. She made this chocolate cake for us on a visit to Melbourne a couple of years ago and I've been using the recipe ever since.

The great thing about it is that, apart from being a good cake, it's very quick and easy to make. It also never fails. I give the recipe below exactly as Angela gave it to me - in fact it's a copy of her original email.

If you want to ice the cake, I suggest dusting it with flour before you do. This will ensure that the icing sticks to the cake and not the plate it's standing on! Just use a sifter to flour the outside of the cake and then use a pastry brush to dust off any excess.

If you want a bigger cake, make two and sandwich them together with chocolate cream in the middle and either chocolate cream or icing on top. Makes a great celebration cake for the calory conscious.
