Basic Cake Mix

I want to prove to you that baking a cake is simple. Just follow the recipe and you will have a perfect cake. After that you can experiment.

I’m assuming this is a first time attempt for you, so I have reduced the ingredients to the most basic and the simplest. Be sure to line your cake tin, which should be 20cm to 25 cm in size.

Now assemble:

200g self-raising flour
150g melted butter
150g superfine (caster) sugar
2 eggs
2tbs of milk
Pinch of salt
150g fruit – this can be dried fruit, cherries, apple, banana, passion fruit or just about anything you want to flavor the cake with.

Preheat the oven to 190°C, 375°F

In a food mixer, combine all the ingredients thoroughly. Transfer the mixture to your cake tin and bake for 50 minutes in the middle of the oven. Test by inserting a skewer down through the middle of the cake. If it comes out clean your cake is done.

Transfer it to a cake rack to cool and remove it from the tin once you can handle it comfortably
